I would like to start making some tunnels on Long Island. Hopefully this will help encourage more nodes as we can populate the mesh status window so we see other nodes. Plus we can begin developing services on the mesh while we wait for RF links to be established.

Should I assume the mesh tunnel was / is not popular? No one has replied or posted here in a few years. Has this method been successful? Or is tunneling seem to be cheating?

it is fairly popular for bridging mesh islands until RF connections can be made. All of my tunnel optimizations/features are now built-in to the AREDN firmware. You can still install the tunnel-addon on BBHN.
